Beets (Beet Root & Greens)
What is it?
Beets come from the same Vegetable family as Chard & Spinach. Lucky for us we are able to use both the Root & the Greens of Beets.
What’s in it?
Beet Roots have a wonderful amount of Folic Acid, Fibre, Manganese & Potassium. Beet Greens are filled with Calcium, Vitamin A & Vitamin C. Both have good supplies of Magnesium, Iron, Vitamin B6 & Phosphorus.
What does it do for us?
Beets have long been known to help with the Detoxifying process of the Liver (specifically phase 2: where the Liver turns harmful toxins into harmless waste). The deep red colouring is a powerful Anti~Cancer agent, especially with Colon & Stomach Cancer.
Best way to buy it?
Try buying Beets with the Greens still attached. Slightly wilted greens can be refreshed in the fridge. Beet Roots should be firm & smooth not soft or wrinkled. Organic is the smarter way to go due to the fact that soil contamination due to pesticides is still high.
Best way to use it?
Steaming or Roasting Beets is the easiest way to prepare them. Raw is easier still. Juicing is a wonderful way to get nutrients.
Special Notices:
When eating Beets, some individuals may find that their urine or stool has turned pink/red. This is quite normal & very harmless. In fact, this is a popular test to find out a bodies processing time (time it takes a body to use & rid itself of the food eaten).
Beet Greens have a high level of Oxalate, which in turn could cause Kidney stones in those susceptible.
