What is it?
Celery is a part of the same family as Carrots & Parsley. Unknown to many, Celery stalks are not the only edible part of this Super~Food. Celery Seeds, Leaves, & Roots are also healthy & available to us. Celery comes from Wild Celery which differs in taste, but is just as healthy.
What’s in it?
Celery has an abundance of Potassium, Sodium, Vitamin C, & Calcium.
What does it do for us?
Celery is mostly water, which helps in reducing Water Retention, it also helps in removing toxins from the body, stimulate the lymphatic system & in turn helps with Arthritis & inflammation. Celery has an abundance of phytochemicals called coumarins which are known to be helpful in Cancer Prevention, help lower blood pressure, can reduce migraines, tone the cardiovascular system & help reduce pain.
Best way to buy it?
Buy Celery that is crisp & green. Firm without discolouration is best & Organic is a must according to the Dirty Dozen list. Celery Root should be light brown at the top growing darker as you near the bottom, it should also be firm without spots. Store in the fridge, never in the freezer.
Best way to use it?
Celery should always be eaten Raw as any cooking with devoid it of its nutrients. Try adding Peanut Butter or any other Nut Butters, top with Raisins, Cranberries, Currants, Add to Salads, as the last ingredient of soups, Juiced (a great after workout drink) or in Wraps. Cut up Celery Root & add to other root veggies when Roasting in the oven with Oil & Spices.
