Kale & Collards


What is it?

Kale is a leafy Green that belongs to the Cabbage Family (which also includes Mustard Greens, Kohlrabi, Watercress & more). Kale varieties include: Curly, Dinosaur, Ornamental & come in a few different colours.

What’s in it?

Kale is an incredibly Nutrient dense food ~ some think the most Nutrient dense food. Kale provides us with an incredible amount of Vitamin C, A, E, B6, B9, Zinc & the most Calcium of any other Vegetable.

What does it do for us?

Kale’s ratio of Calcium to Phosphorus is ideal for prevention of Osteoporosis. The Vitamin A & Zinc work together to boost immunity & help fight toxins. Kale has Cancer fighting properties, an abundance of Chlorophyll & Lutein (which is wonderful for eye sight)

Best way to buy it?

Fresh & Organic is important with these delicate greens. Look for dark healthy Leaves without yellowing spots, dry or wilted edges. Store kale in the Fridge standing in a cup of water or your crisper up to several days.

Best way to use it?

Raw in Salads, Steamed with Rice, Use it instead of a flour wrap, dehydrated as Kale Chips, Juiced, lightly sauted, on Pizza, use like you would any lettuce or Spinach.

Special Notices:

Because Kale is a part of the Cabbage Family, individuals who have issues with their Thyroid Gland should take care as it may interfere even more, cooking Kale will decrease the active compounds that can interfere (goitrogens).

Kale also has a high level of Oxalate, which in turn could cause Kidney stones in those susceptible.
