Yesterday was freezing cold. I’m not talking about -20.C or even -30.C, here with the windchill it was a blistering -45.C!!! Being a stay-at-home mom and having the school 14 houses away, I could not with a conscious drive my kids to school….. alas, we walked (bundled up to the max!)… brrrrrrr. What you need to understand with a cold that COLD, is that it is really really hard to warm up after wards. You should also know that I’m the kind of person who hates (HATES!) being cold, I think it’s the worst torture around. Usually I’m wearing a sweater, slippers, and have a little heater going even when the house is a balmy 73.F!

anyways….

now that you know how cold it really was, and how much of a wimp I am you’ll understand why I wanted to turn my oven on and keep it that way all day! The only way I could do this was to bake and cook all day. Great timing too because I had been reading a bunch of blogs with amazing sounding treats on it that I just needed to try! Here it goes…..

Recipe #1 from iheartwellness is a wicked salt and vinegar guilt free tv munching snack!

Just as the site says: Mix together sunflower seeds, apple cider vinegar and sea salt!
I used 3 cups sunflower seeds,
3Tbsp Apple Cider Vinegar and 3Tbsp of Sea Salt
Mix
Place in an oven for 250 (I turned it up to 325) and bake for 1-2 hours (stirring every 20 minutes).


I’m glad I did these first cause they were so delish to munch on while making the rest of my goodies!!

While snacking on these yummy treats, I was also making some AMAZING granola bars… This recipe is also from iheartwellness, On the site Kris makes them into ‘clusters’, but I ended up changing it up a bit , and adding / subtracting parts to suit my ingredients.  Here is what I did…

1 cup raw sunflower seeds

1 cup crushed walnuts
1 1/2 cup unsweetened coconut

1 cup cranberries

3 Tbsp Chia seeds
1tsp vanilla
1 cup melted coconut oil

Mix well together, put on cookie sheet and flatten. Place in freezer to set. While there make your chocolate sauce. I mixed together in a pot on the stove the following…

2 Tbsp butter (or coconut oil)
1 Tbsp cocoa
1 1/2 Tbsp Brown Sugar

Once the bars are set, take them out of the freezer, cut into desired sizes (bars or squares, etc), and drizzle still hot chocolate sauce. Put back into freezer to set chocolate and store in the fridge. Now, I’ve never made granola bars before, but these turned out so amazing, that even my hubby and kids were sneaking into the kitchen to wolf some more down!

So, I have now put away my cooled and flavoured sunflower seeds into a nice glass jar in the fridge. The bars are staying safe away from my fingers in a container in the fridge. And I’m starting to make some mint chocolate covered peanut butter balls. I found this recipe here on all day I dream about food so yum!!
I tweaked it a bit with half rice flour and half regular flour, and used a mint chocolate for some of them, and the rest I made chocolate with the cocoa powder….

Here is what they turned into..
This is the Chunky peanut butter, butter, vanilla, and flour mixed together (I used maple syrup instead of the sugar substitutes shes had listed) all rolled into cute little balls.

Put these into the freezer while you melt your chocolate….

Then dip each peanut butter ball into the melted chocolate, and place back into the freezer to set. Store in the fridge if you have any left! Yum!!

Mine have little holes in the tops from the toothpicks I put in them to help me with dipping!

While I was making all these, I also made a few dozen (ok, 5 dozen), of my kids fav flour free totally chocolate and peanut butter cookies….

you can find the recipe here from last time, and made some yummy gluten and dairy free butter chicken for dinner!

and so, after all this, I was tired, and worn out, and full of chocolate…. but best of all,

I WASN’T COLD!!!!!!!
(and better yet, my fridge was full of yummy healthy treats for the rest of the week!)

Roll into Lunch with these 2 new Rolls!

Getting bored of the same old Sandwiches & Salads? My kids sure are! Here’s an easy & yummy way of getting unstuck & still keep it Healthy!

ROLL #1.

This works best if you make extra Brown Rice the night before & have it cold & ready in the Fridge. I know most people say you need ‘sushi’ rice to make sushi, but it’s just not the case! When you’re ready grab your Nori sheet & Roller & add a bunch of Brown Rice. (mines a little yellow because I cooked it with Turmeric)

Make sure you get it all the way to the end or it won’t stay closed when you roll it.

Now there are a million ways to fill your Sushi. Cucumbers, Salsa, Lettuce, Hummus, Chard, Olives, Beans,Carrots, ANYTHING! Today I really wanted to just keep it SUPER SIMPLE! All I added was a bunch of Roasted RedPepper Miso.

I rolled this baby up, cut & ate it faster then a bat~outta~hell!!! 🙂

Because this Brown Rice wasn’t ‘sushi’ rice, it wasn’t as sticky. But that didn’t bother me one bit. These babies are SO fast & easy to make, plus they taste delish & are healthy (depending on what you put in them).

ROLL #2

These Rolls were inspired by my Aunt who brought over some really cool Wraps (& some delish Trader Joe’s Almond Butter over on a trip here a few weeks ago)

These wraps are even simpler then the Sushi ones above.

Simply take your favorite Sandwich fillings (here we have Almond butter & Raspberry Jam). And….

You guessed it 🙂

ROLL!!!

Pop these babies into your lunch (or your kids lunch). And away you go! Easy, Simple, Healthy! Add a Banana in there if you’re keen. Or make a salad wrap, Bean wrap, Hummus & Salsa wrap, the possiblilites are Endless!

2 New Yummy Bite~Sized Vegan Healthy Amazing Treats

Since we have made the family decision to stop eating products with eggs in them, I thought that I should stock our fridge with some Yummy Bite~Sized Vegan Healthy Amazing Treats. So far I’ve made 2 different Yummy Bite~Sized Vegan Healthy Amazing Treats, but I’ll keep them coming if you find them a good addition to your fridge.
Black~Bean Brownie Bites

1 can Black Beans

3/4 Cup Vegan Chocolate Chips

2Tbsp Maple Syrup

Blend the ingredients together in your Ninja (or blender) & then scoop into mini~cupcake holders!

*the Chocolate chips stayed a little crunchy which was a really nice surprise!

I put these in the Fridge & they have kept well so far!

Banana Peanut Butter Chocolate Crunchy Bites

1 Cup Crunchy Peanut Butter

2Tbsp Coconut Oil

1 Cup Vegan Chocolate Chips

1 1/2 Banana’s

1tsp Vanilla

Blend the ingredients together in your Ninja (or blender) & then scoop into mini~cupcake holders!


Here is a photo of both of them. I’ve also made the Black Bean Brownies with Black Soy Beans & they had a slight Coffee taste to them. Great!

You can add Maca powder, Cacao powder, Spiralina powder or anything else if you want to bump up the Healthy 😉

Happy Easter Weekend All! I’m so excited that Spring has Sprung & I have a (mostly) long weekend. Is it weird that I have Friday, Saturday & Monday off? 😉 huh… I guess I’ll take it! This year we’re doing a TON of different things for the Easter Celebrations. I won’t give them all away, but needless to say it’s 100% Vegan (besides a few chocolate treats~milk), but there will be no eggs, etc! Can’t wait!

Detoxinista has done it again! I’m speechless~ I can’t wait to try this recipe out. Do you love sushi like me? Take a look at how ingenious she is with this substitution of carrot pulp (from your juicer, you have a juicer right?) for Rice!!

so….. what do you do if you don’t have a juicer (tsk tsk) or maybe you just don’t want to use your left over carrot pulp instead of rice? then go over to Sarah’s site & try Quinoa sushi~ how amazing do they look? Needless to say, we’ll be eating a TON of Vegan sushi around here!!!

I love Miso. It’s one of my top fav’s in the world. I also am pretty partial to Asparagus, especially when it’s in season. So what do you get when you add these together? Boom!

A new blog I started following has proven to be great. Love this one with rice & mushrooms!!!

Things you need to read!

Hi everyone! Are you so excited for the weekend? I love that it’s Friday!!! My boys have been on Spring Break for the last week & I’m pumped to be able to hang out with them for a few days.

Instead of a Review this Friday, I thought I would share some of the Amazing Posts that I read in the last few weeks. These are totally worth it. So grab yourself a cup or Tea or Coffee (or Wine, depending on what time zone you’re in) & enjoy!

This post (zero waste home tips) made me think really hard about how we Use & ReUse things in our house as well as the amount we Waste (both Food & Money). We take pride in ReUsing our bottles for Bulk Items & Composting regularly, but I now feel that there are so many more options out there for us to do. It opened my eyes to how wasteful some things are, & gave me great ideas on how to change it. I’m looking forward to saving money & the planet a little bit more now! I especially love the way they have added a 4th R (Refuse!) & remind us that it is Firstly Reduce, Then ReUse, and Lastly Recycle!

Conscious Diva’s had a nice article that also made me think. The article about The Grass is Always Greener really made me appreciate my life & helped me remember that it really is in the way you look at it, & sometimes you just need to take a step back to see where you really are.

Everyone has Money Issues right? I don’t care who you are, there is something about money that makes people a bit crazy. This article has 5 cute tips on how to be more spiritual with the moolah issues. It’s not a long post, but it is cute!

Oh She Glows is a Blog I go to regularly for Amazing Recipes. Angela is coming out with a cookbook soon & I am dying to buy it!!! (or get it as a present, whatever…;) ) Here is a recipe for Freezer Fudge that made me drool, what do you think of it?

Mung Beans are what Bean Sprouts are made of. Did you know that? Here’s a recipe for Mung Beans & Root Veggies that is Perfect for the days that are still a little too chilly for Salads 🙂

Lauren over at the Holy Kale had a great article about keeping your Produce fresh longer (something I think everyone should know tips for). My only add~on would be to keep your Onions with your Apples as they keep each other from going bad (cool hey~ did you know that tip?)

Jess over at Wellness Warrior has a great 4 part video interview series with James Colqhoun from Food Matters (as well as the new film coming out March 21st Hungry for Change). Take a look at all 4 parts here #1 #2 #3 #4. There is so much info here that I just can’t get into it all. James talks about what his rules are for living a better life, how is he thankful, foods role, & so much more….. Chris & I just watched Food Matters,  (it’s free on YouTube) & it’s a great eye~opener. It made me much more confident to be in the field that I’m striving in (Nutrition, Fitness, Stress Management & Detoxing) & totally made me feel like eating Plants (not Animals) & taking our Supplements was A~OK!

Melt in your Mouth Valentines Chocolates

Here is goes…….

I’ve battled back & forth in my head about sharing this recipe with you all or making billions of dollars on it 😉 I’ve decided that sharing it with you, all my loyal readers, is totally the best way to go!

I love this recipe for a few reasons.

#1~ it’s totally simple. The ingredients are few & the actual way to make it is easy~peasy!

#2~ the ingredients are completely healthy! Whaaaat? Healthy Chocolate? YUP!

#3~ you can personalize it to your hearts content!

Okay. Deep Breathe. Here is goes!!!

(pls note: I’ve had to make small changes due to the fact that our stove/oven is BROKEN!!!!)

Get your ingredients ready!

1/3 Cup Coconut Oil

1/2 Cup Choice of Chocolate

Mix & Melt together

I usually do this on the stove, but today I had to use our mini~oven (pretty inventive right?) I had to keep an extra close eye on it, I really dis~like the taste of burnt chocolate. When it’s nice & melted you need to add in some

1/2 Cup Maple Syrup!

(aprox, depending on if you’ve used sweetened Chocolate or not~ I use unsweetened, so adjust to your tastes)

While this is all melting & mixing keep your fingers out of the pot taste~testing by getting your mini cupcake holders ready. Plain, with treats, it doesn’t matter~ they’re all good!!!

Coffee?

Hazelnuts?

Cayenne Pepper?

Candies?

Currants or Dried Fruits?

Anything your Heart desires! Why not add a small scoop of Peanut Butter, Candy Canes… the list can go on & on!

Once you have filled your mini~cupcake liners to 3/4 full, throw these sweet~hearts in the Fridge. Let them cool at least 25-30 minutes before you pop them in your mouth & let then melt!

If serving them, leave them refrigerated until ready to eat, these babies will start thawing soon, so don’t keep them out too long. If you’re taking them somewhere, make sure they get put in a cooler or something! If all else fails & they start melting, eat up!!
